Join two-time bestselling author Noa Tishby for “Matzah-licious!” as she reinvigorates matzah this Passover with Jewish chefs and foodies to create seven unique kosher-for-Passover recipes.   • Ben Soffer, a podcast host and influencer, with more than 1.4 million followers on Instagram, shares a recipe for the ultimate Passover schnitzel using barbecue potato chips. He also shares his childhood trauma of never having found the afikoman (a hidden piece of matzah) but getting $5 from his grandfather anyway.
  • Sivan Kobi of Sivan’s Kitchen, a cooking influencer of Israeli and Iraqi descent, shares her easy recipes for when a mom of four runs out of time and ideas for a kosher-for-Passover breakfast with decadent matzah brei cheese patties.
  • Always a crowd pleaser, Jake Cohen, Jewish cooking influencer and author of two best-selling cookbooks, “Jew-ish” and “I Could Nosh,” makes the ever-addictive matzah brittle with dark chocolate, pistachios, dates, and plenty of butter!
  • Beejhy Barhany, the Ethiopian chef, owner of Tsion Cafe in Harlem, and author of the newly released cookbook “Gursha” (Amharic for “mouthful”), teaches Noa how to make the original matzah using teff flour. Beejhy also expresses her deep connection to Passover as the Exodus reminds her of her own exodus from Ethiopia to Israel.
  • The hilarious host of “Someone Feed Phil,” now on its eighth season on Netflix, and cookbook author Phil Rosenthal tells Noa that he’s never found a matzah recipe that he likes until he tries Noa’s sister’s chocolate matzah cake, a childhood favorite of Noa’s growing up in Israel.
  • Brooke Baevsky, known as Chef Bae, is a celebrity private chef and food influencer who says she loves Passover because food is her love language. She shows Noa how to make matzah toast crunch (see recipe below!), adapting a breakfast favorite to be kosher for Passover.
  • Eitan Bernath, a chef, cookbook author, and the primary culinary contributor on “The Drew Barrymore Show,” makes his grandma’s matzah ball soup, sharing a traditional taste of home with Noa.

Matzah Toast Crunch

Preparation Time: 10 minutes. Total Time: 45 minutes. Servings: 4.

Ingredients

  • 4 pieces regular or gluten-free matzah
  • 2 tablespoons regular or vegan butter (melted)
  • ¼ cup coconut sugar
  • 1 teaspoon ground cinnamon
  • Pinch of salt (optional, for balance)

Directions

  1. Preheat your oven to 350 degrees.
  2. Break the matzah into small, bite-sized pieces (you can break it with your hands or use a knife).
  3. In a small microwave-safe bowl or on the stovetop, melt the butter until liquid.
  4. Make the cinnamon-sugar mixture: In a separate bowl, combine the coconut sugar, ground cinnamon and a pinch of salt (optional). Mix until everything is evenly combined.
  5. Drizzle the melted butter over the broken matzah pieces and toss them to ensure they are fully coated. Then sprinkle the cinnamon-sugar mixture over the matzah and toss again to coat all the pieces evenly.
  6. Spread the coated matzah pieces in a single layer on a baking sheet lined with parchment paper. Bake for about 10-12 minutes, checking occasionally to ensure it doesn’t burn. The pieces should be golden brown and crispy.
  7. Once baked, remove the tray from the oven and let the matzah crunch cool for a few minutes. As it cools, it will become even crispier. Enjoy with your favorite milk.
