In this installment, Leviton talks to Marcia Weiss about her grandmother Mary Gabay’s Passover minas, Turkish Passover treats that resemble matzo empanadas. The 30-minute segment will feature the story and history behind minas and the Gabay family.
“As a professional chef, it’s not very often that home cooks will cook for me. It is too intimidating, they say. I get it. Really,” Leviton says. “Even my lovely wife does not cook for me. Part of that may be that I do not let her, but that is not the point. The point is that she does cook for me once a year, on Pesach, when she makes her mother’s matzo brei. It is a very traditional Ashkenazi version, and it is always delicious. Eggy, salty, a wonderful combination of textures from matzo soaked and cooked to varying degrees. Then I was given recipes for Turkish minas. Explained to me as basically bourekas with matzo, I was immediately intrigued. Like so many other dishes, this represents the complex evolution and expression of the Jewish people and our food and is exactly what Kitchen Explorations is all about. A little from here, a little from there, and then we are eating Jedi master-level matzo brei. What could be more interesting or more delicious?”
